Dear Fellow Culinarians,

It is my great honor to host and chair the second American Culinary Federation Schenectady County Community College Spring Culinary Classic. This two day competition promises to be a wonderful weekend to display culinary talent amongst some of the best chefs in the country. We have pulled out all the stops and have opened a large number of categories for all of you to compete in.

• Saturday
o The highlight of the first day will be our Student Individual Classical Cooking Skills Competition (SK 1-9)
o Traditional Cold Food salon with categories A-E being available
o Contemporary Cooking and Pastry categories K1-K9 and P1-2 will be available
o Finally on Saturday, the 2-day Traditional Edible Cold Food category will begin with the first eight hour prep day (G)

• Sunday
o The highlight of the day will be the Traditional F/1 Market Basket, F/2 Market Basket, F/4 Nutritional Challenge and P/4 Pastry Market Basket
o a continuation of the second day of the 2-day Traditional Edible Cold Food category with eight hours to prep, glaze and present (G)
o H/1 and H/2 Ice Sculpting
o Contemporary Cooking and Pastry categories K1-K9 and P1-2 will be available
o Contemporary W – Cyprus Hazelnut Honey Competition
The Cyprus Embassy has decided to open a Contemporary category in which the professional chef must feature their hazelnut honey. The chef may present any contemporary category but the honey must be a featured ingredient. If you wish to enter this category please call me ASAP (Christopher Tanner) so that I may send you a sample of the honey to practice with and for you to use for your dish. There will be additional honey on hand the day of the competition. The winner’s entry will be featured on the Cyprus Government’s website and the following prizes will be awarded.
• 1st Prize $1,000
• 2nd Prize $600
• 3rd Prize $400

Our confirmed judging panel includes ACF Certified judges from a vast variety of backgrounds and from numerous regions. The list includes chefs Thomas Recinella, CEC, CCE, AAC and Victor Sommo, CSC both from Delhi, NY; Noble Masi, CMB, AAC from Massachusetts; Rene Marquis CEC, CCE, AAC and from Florida, Mike Morgan, CEC, AAC from Binghamton, NY, William Hoenstein, CEC from Salty’s Pub and Bistro in Clifton Park, NY and myself, Christopher Allen Tanner, CEC, CHE.

We have a list of local hotels in the area for those that are traveling from out of town. If you are planning on attending the competition, make sure to reserve your room early as there are many other events happening in the area during the weekend of our competition.
