Hospital Food Service is well positioned for partnering with physicians and nutritionists to encourage customers to make healthy food choices. This means back to the basics, fresh vegetables, whole grains, and appropriate portion sizes. We need to encourage customers to consider quality rather than quantity when determining the value of their meal.

What do you see as the new trends for hospital foodservice in the coming year?
Cindy Graham Comment by Cindy Graham on November 20, 2009 at 9:12am
Currently student at AI Kansas City and have a strong interest in "nutritional cooking" for special diets, improving school foods and related. I never thought about the hospital area as well...like to know more about how hospital food is becoming less institutionalized (out of the can..smile) in menus etc. Where are the most progressive places right now? Thanks for introducing this career area to me!

Thanks Joe - I'll check into all this as you suggest. Thanks again for your prompt reply. Do you think there would be things of relevance for a neophyte like me at the conference in March? I'll check with Don on this as well.

Just getting started. I spent most of my first career in health care marketing and am now pursuing a second career in culinary arts. Curious about hospital/health system culinary careers. Seems like there is a wide variety of culinary work/experience in hospitals -- from cafeterias, to patient meals to special events/catering. Great way to blend many aspects of culinary training. Thinking of a hospital co-op somewhere in Ohio if anyone knows of any to get some experience under my belt.
