Hola Chefs! Welcome to Taco Rack Uninversity! Tacos for years were considered a street food of Mexico. As time passed the common street taco evolved from the traditional soft flour tortilla into the more desired hard corn shell. Along with the evolution of the taco came more upscale ingredients.
The beef taco began to share the spotlight with chicken, pork, brisket and fish tacos... As the taste for tacos grew the method to create them stayed the same. Preparation of the V shaped shells required individual handling which took time from the kitchen staff. Shell breakage due to excessive handling was also a common problem. The chef usually stood the shell in the platter against the rice or beans making the bottom of the shells soggy. At one time Cheese was considered a garnishment along with lettuce and tomatos. That way of doing things are now over!!!!
