call your sysco rep and buy a F. Dick at wholesale price, good knife, my last one lasted 10 years and I just upgraded to the new F. Dick and have had it for 5 years. I am a working chef so I use it alot. Sysco calls it there Black Diamond series.
If you work in a kitchen that has a knife service, make friends w/ your 'knife guy'. You can usually get a decent, 'gently used' knife for $10 or less.
