If anyone has been keeping up with my blogs about going to the classes that Chef Andre Bedouret has been teaching at the Milestone Culinary Art Center (MCAC), then you will know what great continuing education is all about!
Todays lessons were on Sauces, Reductions, and Emulsions. Think you knew everything there was to know about these subjects????
Guess again!

Milestone Culinary Art Center French Cuisine Update

July 19, 2009

Sunday 11am-7pm I was at MCAC the Milestone Culinary Art Center for a class on French Cuisine, taught by Chef Andre Bedouret. This was going to be a great class I knew because Chef Andre is French. He knows his food just as I know the food I grew up with in New York.

Chef Andre had an amazing list of dishes he wanted to prepare today. There was so much to do and he had everything in order and written out before we got there so he could stay on track.

The mise en place alone too… Continue

It was great seeing you yesterday! Since I can't do CSA if the meetigns are downtown during the day I look forward to the TCA even more that I know you're involved. We'll have some great times ahead! I really want to help out a lot with that chili cookoff that's happening in November... I now a guy that does screen printing if we want to get shirts or even aprons made to give to the entries or to sell. It's just a thought. :)

Yes - I will be there but that will probably be the last CSA meeting I can make. In the last board meeting they decided that the CSA meetings should be held the 2nd tuesday of every month around 11:30 am when the teachers have their monthly meeting. Since I work M-F 9-6 it's hard for me to take time like that to go all the way downtown so I don't know how involved I'll be able to be next year with the CSA. I'll have to pick the meetings I go to since I really want to be more involved in the TCA and those meetings are during the day too. It just all depends on how crazy my weeks are. And no... I can't believe your friends wanted to leave to get whataburger... they had all that food not to mention the open bar!!!

Yea I ended up going... pretty much our whole class ended up going including Chef Shashkan and her husband. My family and I got there right about 7 to grab a table for our class to hang out at and we pretty much stayed there the whole night - over by the Jimmy's Food Store booth. I had a blast and the turnout was great! I'm sad that I missed you but I hope that someone else puts on another event like this so we can hang out at the next one. I'll post some pictures on my Multiply.com site soon.

If you're cooking on a different night does that mean you can make it to the event Wed? I have class that night but we convinced our teacher that since it benefits El Centro we should have an optional "study session" and those that can make the event can go to it. I was sick all last week and am still fighting it so I hope I am better before wednesday so I can partake in the drinks! Thanks for spreading the word about the event! Hope to see you there!

I just bought my ticket for the Dallas Observer's Wine & Dine event that's happening April 22 @ Fashion Industry Gallery. It benefits El Centro so I'm trying to get as many people from my class to go. You should spread the word and get a whole group to go too... who can say no to wine and food?! :) Hope to see you there!

It was very nice to meet you as well... you are just as adorable and sweet as can be! I'm so glad to have another friendly face to see at school. Hopefully we can see each other more often than just once a month at the TCA meetings. :)
