Junior Texas Chef Association Meeting

FYI to all my Chef friends in Dallas, TX, Next TCA meeting will be hosted at the Dallas Farmers' Market Tuesday, August 4th. Don't miss it. For Student Chefs meeting starts at 2pm. For other chefs, restaurant managers, owners, suppliers, etc. meeting starts at 3pm. This will be my last meeting before I'm off to my externship at Disney. I'd like to see a full house all around so, show me the love!

yea i bought a couple off CIA's books. that was my original choice but i changed my mind and tried JWU because the CIA is only a culinary school i thought it would be better to be able to interact with people interested in other things and i thought since they dont have a experience requirment i could have possibly helped some of the other students that have little or no experience. Im not saying i know everything but one thing iv realized over the last couple of years is that one of the most effective ways for me to learn things is by working with and helping people who mght not know as much and even if they did know as much or more any nw question i was asked that i dont know is an opportunity to learn. thank you for the book recomendation ill definitly check it out

thank you for the advice. I agree about school being imprtant. its not that i just chose to not go, i couldnt get the funding. my credit sucks.so the apprenticeship is really my only option. luckily my only 2 options were school or apprenticeship cause either way it goes i will still gain alot.
i know there alot of books out there. i have a ton of them. i buy alot but iv disappointed by several also so i figured by asking experienced chefs what they think i i should read i know ill be getting a solid book. a book i can learn from instead of guy ive never heards opinion.
And also, u asked why im interested in mainly and what direction i want to go but i really cant pick a favorite. a kitchen is a kitchen, a meal is a meal and all types of food have different techniques that are vital parts of what i want my culinary future to be like. so i cant pick a faborite of anything. i love food and everything about it. Your doing what i want to be doing A.S.A.P and thats the apprenticeship. and since u are in it now if u can tell me what u think i should be trying to learn or what books i should read to make the best of the experience than i will definitly respect your recomendations and order them tomorrow if u think they will help. once again i appreciate you replying to my message so quick and thank you for the offer to help. Good luck on the rest of your apprenticeship and extenship

Hi, Mia. Looks like an exciting summer for you. I am still several months away from my externship (jan/feb) but the Disney properties in Orlando are high on my list. I would love to hear from you about your experience there if you can find the time. I'm sure others would benefit as well from anything you'd like the share. Good luck!

If you have never been to sea on a small ship you are going to have a blast, read some of my comments from my trip. If you have more cooking experience before going back to school put that on your resume and send it to Michael Harants thru this site. You should be able to find is email address on the adopt a ship page. michael.harants@navy.mil These are all young kids onboard the ships (high school mentality), but if you like to teach and special dishes that you can make and show when the boat is moving in four different directions go for it. Hey Mia!

Minutes are up on the TCA website (www.texchef.net). Click on Chapter Meetings on the bar across the top, then click on Dallas on the left hand bar. Scroll down to find the meeting minutes. This is where they are posted each month. I also will send them out to Jr/Student participants.

This past week I had finals, so now that those are done I plan to start focusing on TCA plans and you should see announcements coming out soon. I will be getting in touch with you to enlist your help with this too! I really want to work on keeping attendance to our meetings growing, even during the summer when some of the schools are on hiatus or have shortened semesters.
