Last week's Academy events and being honored with the Sharing Culinary Traditions Award was a very special evening. I want to thank all of my colleagues.
Executive Chef of the Union League Club of Chicago. The Union League Club has been recently selected the Number One Private Club in the United States. At present I am now the Chairman of the Board and the Past President of the ACF Windy City Professional Culinarians. Have lived in Chicago for 16 years and worked here at the Club. I have worked in Atlanta, New Orleans, Boston, Memphis, Denver and Phoenix before Chicago.
Sometimes the most inpromtu thing that I create from ingredients I find.

While in High School, I started out as a busboy, dishwasher and then a cook.

If you could have dinner with any three people who would it be and why?
I would want to sit with former President Bill Clinton because he enjoys food and conversation. The late Lucianno Pavoratti because I enjoy his singing and he makes a great bowl of pasta. Finally, the last person would be Alice Waters to talk food and find out about her inspirations to get her where she is today.
What a wonderful acheivement!!!!! Congratulations!!!!!!! I am looking forward to the January Meeting and its topic on certification. I believe you are still holding my ACF Jacket. I want to move up to the next step, so I want to get ready for my practical and written examine. Will these be part of the certifcation process. I have also been working 31/2 years in the industry professionally, does this move me up to the CC level?
