I work in small town here in va. we do about 60 at the most on are brunch and it runs 14 dollars. Are Major Suppliers are Sysco,US FOODS, and Inland food company. I went to Culinary School in 04 and i took my extern here i start as a dishwasher, working my way up as would anyone i didnt want to start out on the line i want to start in dish i had my option to start there but i wanted to get the layout of the kitchen and watch how the other employees worked. I moved up Threw the ranks i was a pantry chef. Banquet chef. I have been the Sous chef for two years now and have made the menu. I do most of the ordering. The chef is a good chef and i have learned alot from him. on a good week end we can do 120 covers a two man line. but times have been slow we do bout 40 to 60 dinners on a busey night. I have tried to express the idea of lighter fair to the owners but they are stuck in there ways. So im changing the Menu to Use the same choices of meats in diferent ways. for instants i have a tenderloin we bring in i do a filet dish with a pepperdew sauce topped with goat cheese, i use that same tenderloin for a land and sea dish and a beef shiraz. plus have it as a petite portion. so im using that in 4 dif ways. to try and cut food cost. they are not intrested in a smaller menu so i try and make more with what i got and still have a public flair to keep up with the hotels history. we are a victorian place. Hey Michael! Tonight is the awards dinner. I will be thinking about you. Mitch Frana and Mark Good will be there. This is my last act as Sarg. at Arms. Mark Good is taking my place now. I'll still be banging around with the chapter for 3 more years. Then it's off to retirement in the U.P. of Michigan. Hope to see you this Feb. in Schamburg.

Thanks for showing me this website! I am 2 months away from graduating! I can't wait! I am doing the Address of Welcome at the Graduation Ceremony, I have to figure out what I am going to say! If you're going to be in the area, you are more than welcome to come. I plan on going back home for a little while; I want to find a job in the area, because i'm not really ready to leave home yet. And actually I am hoping on a train tomorrow to go home for Thanksgiving, finally.
