I am trying to add more vegetables to my diet in order to lower my weight and blood sugar. Butter is my fat of choice but adds too much to my waist. So, I willl try vegetable combining so I can add to the natural flavor without additives. Please give me your suggestions.

Take a look at the magazine Eating Well....a lot of very good dishes..I use as source for diabetic friendly ideas....they include nutritional info...have a good website also...found their cookbooks at the public library...check them out...also skip artificial sweetners....try agave...tasty, natural and ancient...Aztecs used it...happy eating!

Thanks for all the info...wonder why artifical sweeteners arent recommended. They dont add calories or cause my blood sugar to spike...have to have something in my coffee.

Hi Paige,

I love veggies. My suggestion would be to go to the farmers market, stick to the produce, pick up five or six vegetables you have never seen, then look up recipes for them online. Just stick to the ones without butter, or substitute it. Butter is so good, but I have learned to live without it at home. Olive oil is also tasty but can't be used with high heat. Use scraps from the vegetables you cook to make vegetable stock. I love mushrooms. I think they add a hardiness to other vegetables. You can save the stems from them, roast them, and make a great stock with that.

Also as DanTat mentioned, there is a lot behind portions. I tend to eat small all day, whereas my husband will eat one huge meal sometimes. Over the years we have both put on weight, but I am slowly losing while he is still gaining.

Butter is better than margarine. Try to buy organic butter. Avoid margarine! I also use olive oil instead of butter whenever possible. Vegetables are good, especially if you can eat them raw, and from organic sources. You can use herbs, spices, e.g., Mrs. Dash's Recipes, for seasoning.
For weight loss and blood sugar maintenance, eating high-fiber foods, avoiding all artificial sweeteners, and drinking clean water, seems to help me.
Also, portion-control is another factor. Eat a large breakfast, medium lunch, small dinner. I always eat the salad last, after the entree! I also do not "graze" as most cooks and chefs seem to do. I only "taste," not eat. I also eat only at meal times, not graze on the hotline.
